Today’s Follow-Up Activity: Bake a Rosca de Reyes
Prep time: 20 min, Cook time: 25-30 min
Total resting: 2 hrs and 15 min.
Oven temp: 350 F.
Serves: 16 people
Ingredients
½ cup of lukewarm water.
1 envelope of dry active yeast.
4 cups of flour.
¾ cup of sugar
3 eggs and 3 egg yolks mixed with 4Tbs of milk
¼ tsp salt
1 ½ Tbsp orange extract
1 ½ stick of unsalted butter
Freshly grated orange zest (one orange)
Topping:
1 egg yolk/ ¾ cup flour/ 6 Tbsp butter/1/2 cup confectioner sugar
Dry fruit like candied citron, cherries figs.
1 or 2 small plastic dolls or you can use a slice of apple (to hide inside bread)
Preparation
Activate your dry yeast. (dissolve yeast into lukewarm water and add ½ cup of flour, let stand until foamy in a warm place 5-10 min. Cover with plastic wrap.
In the meantime mix the rest of the ingredients together in a stand mixer with the hook attachment until crumbly, then add your activated yeast and continue mixing for about 7 minutes until the dough looks shiny, elastic and soft.
Transfer the dough into a greased bowl and let it rest on a warm spot until double its size (about 1 ½ hrs) covered with plastic wrap.
When the dough is ready you can shape it, add the fruits and don't forget to hide the baby.
Bake until golden brown 25-30 mins.
